It is common to prepare a pumpkin soup, to be served as a side dish or main course, but also as a sauce to accompany or season other courses of greater consistency.

In the preparation of the classic recipe, puree is used to season spaghetti. The most interesting aspect of this recipe is the perfect combination of flavors and ingredients.

Ingredients

  • Spaghetti (300 g)
  • 1 large onion
  • 600 grams of peeled pumpkin
  • 1 glass of liquid cream (250 ml)
  • 2 tablespoons of olive oil (30 g)
  • 2 tablespoons of nutmeg (30 g)
  • 1 tablespoon of salt (15 g)
  • 1 tablespoon of ground pepper (15 g)
  • 200 grams of Parmesan (optional)

Preparation

  1. Pour a drop of olive oil into the pan and add the onion cut into julienne or slices and fry over medium heat  with a little salt.
  2. Add the peeled and seedless pumpkin to the onion sauté. Cook until the pumpkin has softened and blended with the sauté.
  3. To allow the ingredients to blend evenly, stir occasionally.
  4. Meanwhile, put the spaghetti in a pot with water and salt and leave to cook.
  5. Add the cream to the pan and mix. When the spaghetti are ready, add them to the other ingredients in the pan and sauté for 2 minutes.

Spaghetti with pumpkin and mushrooms 

This variant of the original recipe is even simpler than the first. If you are not in a hurry, you can also add some pesto and chicken.

In any case, if you want to prepare it only with pumpkin and mushrooms,  this recipe will still be very good and very nutritious.

Ingredients

  • 200 g of spaghetti
  • 3 chicken fillets
  • 400 g of peeled pumpkin
  • 100 g of champignon mushrooms
  • 2 stalks of broccoli
  • 1 large onion
  • 2 cloves of peeled garlic
  • 2 tablespoons of extra virgin olive oil (30 ml)
  • 1 tablespoon of salt (15 g)
  • 62 ml of white wine

Preparation

  1. Start steaming the pumpkin and broccoli.
  2. Then, brown the julienned onion together with the garlic.
  3. When the onion becomes transparent, add the champignon mushrooms. Fry for a minute. Don’t forget to add salt.
  4. Meanwhile, cook the chicken on the grill. Then cut it into small pieces and put it in the pan.
  5. Add a white wine to the pan with the other ingredients and mix for 2 minutes. This will give the chicken a special flavor.
  6. Remove from heat, let cool and enjoy your meal!
