1. Avocado and egg recipes

There is nothing better to start the day than delicious eggs with avocado. It is  an energizer for the body and a significant supply of protein to improve physical performance.

Ingredients

  • 4 eggs
  • 1 ripe avocado
  • Lemon juice
  • ½ diced tomato

Method

  • Prepare 4  hard-  boiled eggs, cut them in half and remove the yolk, being careful not to break the white.
  • Mash the avocado to make a cream and mix with a little lemon juice and a little diced tomato.
  • Fill the egg whites with the avocado cream and season with salt.

2. Cold Avocado Cream

This recipe is perfect for summer days because the trick to making it delicious is to serve it pretty cold. However, it can also be prepared as an appetizer or as a light dinner.

Ingredients

  • 3 ripe avocados
  • 15 gr of chopped onion
  • ¼ stick of butter
  • 750 ml of chicken broth
  • 200 gr of natural yogurt
  • 30 ml of lemon juice
  • Salt and pepper as required

Method

  • Melt the butter in a pan and lightly fry the chopped onion for a few minutes, until they get a golden color.
  • Extract the avocado pulp and blend it together with the three cups of broth, the fried onion and the yogurt.
  • After obtaining a homogeneous cream, pour it into a baking dish and season with salt and pepper.
  • Put the cream in the fridge for a couple of hours to let it cool well and then serve.

3. Avocado recipes, guacamole

This classic recipe is one of the best ways to enjoy the benefits of avocado, as it can accompany many dishes.

Serve it with typical Mexican tortillas, with fresh squid, with rustic cakes and even on a slice of toast. You will love it!

Ingredients

  • ½ tomato
  • 2 ripe avocados
  • ½ lemon squeezed
  • Fresh coriander leaves to taste
  • ½ onion
  • 1 pinch of salt
  • Chilli to taste

Method

  • Finely chop the onion and tomato and set them aside.
  • Remove the avocado pulp and chop it in a bowl. Keep the seeds apart.
  • After obtaining an avocado purée, mix with the onion and tomato.
  • Add salt, chopped coriander and lemon juice and then mix everything well.
  • If you want to give the guacamole a hint of spiciness, add some chili pepper to taste.

4. Avocado dessert

This pudding-like dessert is a delicious way to savor avocado paired with ingredients such as yogurt and pineapple.

Consumed in small quantities, it is a healthy recipe to prepare as a snack or as a side dish to main meals.

Ingredients

  • 1 medium ripe avocado
  • 1 low- fat natural yogurt
  • ½ glass of pineapple juice (100 ml)
  • 6 tablespoons of lemon jelly (40 g)
  • Sweetener to taste

Method

  • Heat the pineapple juice and, once brought to a boil, remove from the heat and mix it with the gelatin until it dissolves well.
  • Extract the avocado pulp and put it in a blender with the yogurt and the sweetener.
  • Blend everything until you get a creamy mixture and then add the gelatin, without stopping blending, to prevent lumps from forming.
  • Pour the mix into a mold and put it in the refrigerator to solidify.
