Using the microwave is an easy, quick and healthy way to cook champignons. From a botanical point of view, from a nutritional point of view, they have interesting properties like other vegetables.

The success of mushrooms is always guaranteed, be it champignons, chanterelles, pleurotus or nails. They contain little cholesterol, sodium and calories, but they provide numerous micro-nutrients including potassium, copper, selenium, antioxidants, B vitamins and fiber.

They can be prepared in different ways, the recipes are many: omelettes, rolls, sautéed or as a side dish to be combined with meat or rice.

It is a simple and light dish to which we can give a special touch thanks to the dressing.

Ingredients

  • 400 g of fresh mushrooms
  • 3 cloves of garlic
  • 3 tablespoons of extra virgin olive oil
  • parsley to taste
  • the juice of half a lemon
  • salt and black pepper

Preparation

  • Cut the base of the stem and wash the mushrooms to remove any traces of earth. You can rub them under water or clean them with a toothbrush. Let them dry.
  • Peel the garlic cloves and cut them into slices. Chop the parsley. Put everything in a bowl, mix and add oil, lemon, salt and pepper to taste.
  • Now cut the mushrooms into slices and place them in a container suitable for cooking in the microwave. Pour in half of the dressing.
  • Cover the mushrooms with an upside-down plate and cook at maximum power for 6 minutes. If, on the other hand, you prefer them more cooked, let them cook for another couple of minutes.
  • Before serving, season with a little salt and pepper.

Another easy version: microwaved mushrooms with cheese

Another way to prepare mushrooms in the microwave is to combine their delicate flavor with the stronger one of feta.

Ingredients

  • 200 g of large mushrooms
  • extra virgin olive oil
  • 200 g of feta
  • salt and pepper
  • Origan

Preparation

  • First of all, wash the mushrooms and make sure you have eliminated the residual earth; then cut the stem being careful not to break the cap of the mushroom. If the stems are fresh you can use them to prepare other recipes, such as risotto or a pasta sauce.
  • Now cut the feta into cubes.
  • Arrange the mushrooms on a baking tray and fill them with the cheese. Season them and finish with a few drops of olive oil.
  • Cook in the microwave for 4 minutes at maximum power.
  • For best results, after cooking, let them rest for 3 minutes in the oven. Before serving, sprinkle some oregano.
